NEW Shiitake Pasta With *Sunflower Seed Cream Sauce!*

Hi Reader,

As simple as this recipe is, it's also a little fancy. And if I'm being honest, that's the only kinda fancy I like.

What makes it fancy? Well, two things:

A) shiitakes aren't cheap! But also...

B) wine

Shallots, shiitake mushrooms, and garlic are sautéed in a bit of vegan butter then tossed with a creamy, blended sauce made with raw sunflower seeds. That's right - no cashews!

But the real MVP is the crisp white wine and the way it takes the sauce up a notch.

It adds such a smooth acidity that balances the rich and earthy flavor of shiitake mushrooms.

Anyway, we think this dish is just all around delicious!

Great when you want something special that's actually easy to pull together. 👍
